Fancy something different for breakfast? Try my shakshuka - a dish originating from Israel, that is great for breakfast as much as for dinner!

You will need:
  • 1 can of chopped tomatoes
  • 1 tsp coconut oil (or spray oil)
  • half red onion, peeled
  • half cup mushrooms, sliced
  • whole red pepper, chopped
  • cup of spinach
  • 4 eggs
  • 6 slices of chorizo (optional)
  • salt and pepper
  • fresh rucola or cilantro

Preheat the oil on the pan, add onions, mushrooms, peppers, spinach and chorizo (if you're using it). Fry vegetables and chorizo on the pan for few minutes, then add can of chopped tomatoes and simmer for further few minutes. Crack the eggs into the pan, reduce the heat and poach all together until the eggs are cooked. Add salt, pepper and rucola or cilantro. Feeds 2. Enjoy!
