BE MY VALENTINE

Yes, just if some of you have not been reminded yet - it's Valentines Day! And if you're stuck for options for romantic dinner for two, try my healthy and delicious lasagne!

You'll need:
- 500g lean steak mince
- half red onion, chopped
- 4 mushrooms, peeled and chopped
- green or red pepper, chopped
- fresh parsley, chopped
- handful of cherry tomatoes
- handful of spinach
- 400g canned tomatoes
- courgette, sliced
- wholemeal lasagne sheets
- fresh mozarella

Cook your meat on spray oil with onions until browned. Add mushrooms, peppers, parsley, cherry tomatoes and simmer. Add canned tomatoes and simmer for few more minutes. Preheat oven to 200 degrees. In oven dish place 1/3 of the meat, top with sliced courgette, fresh spinach, lasagne sheets and mozarella. Repeat 2 more times. Place in the oven and cook for 25min or until pasta is softened. Serve with fresh salad, enjoy!
